- 1 cup carrots, thinly sliced
- 1/2 cup green onions, chopped
- 3 cloves garlic, minced
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp oyster sauce
- 1 tsp cornstarch mixed with 2 tbsp water
Instructions
- Boil water in a large pot and cook lo mein noodles according to package instructions until al dente. Drain and set aside, reserving 1/2 cup pasta water.
- In a large skillet over medium heat, add sesame oil. Sauté minced garlic for 30 seconds before adding bell peppers and carrots. Cook until softened.
- Add shrimp to the skillet and cook until pink and opaque (about 3-5 minutes).
- In a small bowl, whisk together soy sauce, oyster sauce, and cornstarch mixture until smooth. Pour over shrimp and vegetables.
- Toss in cooked noodles and reserved pasta water; mix well until everything is combined and heated through (about 2-3 minutes).
