  • 8 oz lo mein noodles
  • 1 lb shrimp, peeled and deveined
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup carrots, thinly sliced
  • 1/2 cup green onions, chopped
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp oyster sauce
  • 1 tsp cornstarch mixed with 2 tbsp water

Instructions

  1. Boil water in a large pot and cook lo mein noodles according to package instructions until al dente. Drain and set aside, reserving 1/2 cup pasta water.
  2. In a large skillet over medium heat, add sesame oil. Sauté minced garlic for 30 seconds before adding bell peppers and carrots. Cook until softened.
  3. Add shrimp to the skillet and cook until pink and opaque (about 3-5 minutes).
  4. In a small bowl, whisk together soy sauce, oyster sauce, and cornstarch mixture until smooth. Pour over shrimp and vegetables.
  5. Toss in cooked noodles and reserved pasta water; mix well until everything is combined and heated through (about 2-3 minutes).
