  • 1 (28 oz) can whole peeled tomatoes
  • 3 tbsp harissa paste
  • 4 large fresh eggs
  • 100g crumbled feta cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp extra virgin olive oil
  • Fresh cilantro or parsley for garnish

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté onions until golden brown, then add minced garlic and cook until fragrant.
  2. Stir in canned tomatoes, harissa paste, cumin, paprika, salt, and pepper. Simmer for about 10 minutes until slightly thickened.
