  • 8 oz andouille sausage, sliced
  • 1 cup onion, chopped
  • 1 cup bell peppers (mixed colors), chopped

  • 14 oz canned diced tomatoes
  • 4 cups fish stock or chicken broth
  • 2 tbsp Creole seasoning
  • ½ cup flour
  • ½ cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a heavy-bottom pot over medium heat, combine flour and oil to create a roux. Stir continuously until it turns a deep mahogany color (about 15-20 minutes).
  2. Add chopped onions, bell peppers, and minced garlic to the roux; sauté for 5-7 minutes until fragrant.
  3. Gradually stir in fish stock or chicken broth along with canned tomatoes; mix well.
  4. Sprinkle in Creole seasoning and simmer gently for 30 minutes.
  5. Add shrimp and sausage; cook until shrimp turn pink and opaque (about 5-7 minutes).
  6. Serve hot over cooked rice or with crusty bread, garnished with parsley or green onions if desired.
