- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- ½ cup granulated sugar (divided)
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 cup sweetened coconut flakes (divided)
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers, melted butter, and ¼ cup sugar until combined. Press into the bottom of a springform pan.
- In another bowl, beat cream cheese until smooth. Gradually add sour cream and remaining sugar; blend well.
- Fold in half of the toasted coconut into the cream cheese mixture.
- Pour filling over the crust and bake for 50-60 minutes until set but slightly jiggly in the center.
- Turn off oven; leave cheesecake inside with door slightly ajar for one hour. Chill in refrigerator for at least four hours or overnight.
- Melt chocolate chips in a microwave-safe bowl; drizzle over chilled cheesecake and sprinkle with remaining coconut before serving.
