  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup sweetened coconut flakes (divided)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers, melted butter, and ¼ cup sugar until combined. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add sour cream and remaining sugar; blend well.
  3. Fold in half of the toasted coconut into the cream cheese mixture.
  4. Pour filling over the crust and bake for 50-60 minutes until set but slightly jiggly in the center.
  5. Turn off oven; leave cheesecake inside with door slightly ajar for one hour. Chill in refrigerator for at least four hours or overnight.
  6. Melt chocolate chips in a microwave-safe bowl; drizzle over chilled cheesecake and sprinkle with remaining coconut before serving.
