  • 1.5 lbs boneless, skinless chicken thighs
  • 2 ripe oranges (juice and zest)
  • 1/4 cup honey
  • 3 cloves garlic (minced)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp olive oil
  • 2 tsp fresh thyme or rosemary

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a bowl, mix juice from the oranges, honey, minced garlic, soy sauce, olive oil, and herbs until combined.
  3. Place chicken in the baking dish and pour marinade over it. Marinate for at least 30 minutes (or up to an hour).
  4. Roast chicken for 30-35 minutes until golden brown and cooked through.
  5. Baste with remaining marinade during the last five minutes of roasting for extra flavor.
  6. Serve hot, drizzled with any leftover sauce.
