- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon

- ½ tsp salt
- ⅓ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix together pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined; lumps are okay.
- Fill each muffin cup about two-thirds full with batter. Optionally sprinkle with cinnamon sugar.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for five minutes before transferring to a wire rack.
