  • 1 cup pumpkin puree
  • ¾ cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 8 oz cream cheese (softened)
  • 1 tsp vanilla extract
  • ½ cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine pumpkin puree, eggs, vanilla extract, and melted butter until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. In a small bowl, beat cream cheese with sugar and vanilla until smooth.
  6. Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture on top, then fill with more batter until three-quarters full. Swirl gently with a knife.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
