  • 1/2 cup grated Parmesan cheese
  • 1/3 cup extra virgin olive oil
  • 3 cloves garlic (minced)
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente (about 8-10 minutes). Reserve some pasta water, then drain.
  2. While the pasta cooks, heat olive oil in a skillet over medium heat. Add minced garlic and prawns; sauté for 3-4 minutes until prawns turn pink and opaque.
  3. In a food processor, blend basil leaves, toasted pine nuts, Parmesan cheese, lemon juice, and olive oil until smooth. Adjust olive oil for desired creaminess.
  4. Combine drained pasta, sautéed prawns, and pesto sauce in the pot; stir until evenly coated. Add reserved pasta water if needed to loosen the sauce. Season with salt and pepper before serving.
