  • 1 cup 100% pomegranate juice
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 3 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp fresh thyme or rosemary
  • 1/4 cup pomegranate seeds (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat chicken thighs dry with paper towels and season generously with salt and pepper.
  3. In a bowl, whisk together pomegranate juice, balsamic vinegar, honey, minced garlic, and herbs.
