  • 1 cup sushi-grade tuna or salmon, diced
  • 1 cup jasmine rice
  • 1 ripe avocado, sliced
  • ½ cucumber, thinly sliced
  • 2 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil

Instructions

  1. Rinse jasmine rice under cold water until clear. Cook according to package instructions (about 15 minutes) and let cool.
  2. Dice sushi-grade fish into bite-sized cubes and set aside.
  3. In a bowl, whisk together soy sauce, rice vinegar, and sesame oil. Pour over the diced fish and let marinate in the refrigerator for 10 minutes.
  4. While the fish marinates, prepare toppings by slicing avocado, cucumber, and chopping green onions.
  5. Assemble bowls by placing jasmine rice as the base, followed by marinated fish and topped with veggies.
  6. Drizzle extra marinade over each bowl before serving.
