  • 1 cup granulated sugar
  • 1/2 cup shelled pistachios, finely chopped
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 cup fresh strawberries, pureed for frosting
  • 2 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together the butter and sugar until fluffy. Add eggs one at a time, then mix in milk until smooth.
  3. In another bowl, whisk together flour, baking powder, and chopped pistachios. Gradually add to wet ingredients and stir until just combined.
  4. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  5. For the frosting, blend strawberries into a puree. Beat softened butter until creamy, gradually add powdered sugar, then mix in strawberry puree and vanilla until smooth.
  6. Once cupcakes are cool, frost generously with strawberry buttercream and enjoy!
