Description

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream the butter and sugar until light and fluffy. Add the egg and vanilla; mix until combined.
  3. In another bowl, whisk together the flour, chopped pistachios, and salt. Gradually add this mixture to the wet ingredients until just combined.
  4. Drop spoonfuls of dough onto prepared baking sheets, spacing them two inches apart. Flatten slightly.
  5. Bake for 12-15 minutes or until edges are golden brown. Allow cooling on baking sheets for five minutes before transferring to wire racks.
  6. Once cooled, spread pistachio cream over half of the cookies and top with another cookie.
