- 1 ½ cups crushed graham crackers
- ¾ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ½ cup sour cream
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 2 Earl Grey tea bags
- 1 cup fresh or frozen mulberries
Instructions
- Preheat oven to 325°F (160°C). Grease or line an 8-inch springform pan with parchment paper.
- In a bowl, mix crushed graham crackers and melted butter until combined. Press into the bottom of the pan and bake for about 10 minutes. Let cool.
- In a small saucepan, heat ½ cup water to simmering. Steep tea bags for 5 minutes, then remove.
- Beat cream cheese until smooth in a large bowl. Gradually add cooled tea infusion, sour cream, sugar, and vanilla; mix until well combined.
- Add eggs one at a time, mixing well after each addition. Pour over cooled crust.
- Bake for about 60 minutes or until set but slightly jiggly in the center. Cool completely before refrigerating for at least four hours.
