  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and a pinch of salt until well combined.
  3. In another bowl, mix the eggs, vegetable oil, and vanilla extract until smooth. Pour this mixture into the dry ingredients and stir gently until just combined.
  4. Fold in the grated carrots and chopped nuts.
  5. Fill each muffin cup about three-quarters full and bake for 20-25 minutes or until a toothpick inserted comes out clean.
  6. Let cool before adding cream cheese frosting if desired.
