  • 4 skinless cod fillets (about 6 oz each)
  • 3 tbsp white miso paste
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey (or maple syrup for vegan option)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 8 oz broccolini, trimmed
  • 1 tbsp olive oil
  • Salt, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Rinse broccolini and trim tough ends. Toss with olive oil and salt.
  2. In a small bowl, whisk together miso paste, soy sauce, honey, rice vinegar, and sesame oil until smooth.
  3. Pat the cod fillets dry and place on a parchment-lined baking sheet. Generously brush with the miso glaze.
  4. Arrange broccolini around the cod on the baking sheet.
  5. Bake for 15-20 minutes until the cod flakes easily with a fork and is golden brown at the edges.
