Description

  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup pumpkin puree (100% pure)
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • Whipped cream (optional for topping)

Instructions

  1. Preheat the oven to 325°F (160°C) and line a mini muffin pan with cupcake liners.
  2. In a bowl, mix graham cracker crumbs and melted butter until moistened. Press into each muffin liner.
  3. Beat cream cheese and sugar until smooth. Add pumpkin puree, eggs, vanilla, and pumpkin pie spice; mix well.
  4. Fill each crust with the cheesecake mixture until nearly full.
  5. Bake for about 20 minutes or until set in the center. Cool at room temperature before refrigerating for at least two hours.
