Ingredients

  • 4 cups stale bread, torn into cubes
  • 1 cup low-sodium chicken broth
  • 1 small onion, finely chopped
  • 1 cup celery, diced
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh sage, chopped
  • 2 large eggs, beaten
  • 1/2 tsp black pepper
  • 4 tbsp unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. In a skillet over medium heat, melt butter and sauté onion and celery until softened (about 5 minutes).
  3. In a large bowl, combine torn bread cubes, sautéed veggies, herbs, eggs, broth, and pepper; mix gently.
  4. Fill each muffin cup with the mixture, packing it down slightly.
  5. Bake for 20-25 minutes or until golden brown.
