  • 1 lb lean ground beef
  • 2 medium eggplants, sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 28 oz canned tomatoes (diced)
  • 1 cup feta or Cotija cheese, crumbled
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 cups milk
  • 4 tbsp butter
  • 4 tbsp flour
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a large baking dish.
  2. In a skillet over medium heat, sauté onions until translucent; add garlic and cook for another minute.
  3. Add ground beef, breaking it apart as it cooks until browned (5-7 minutes). Drain excess fat and stir in canned tomatoes, cumin, and chili powder.
  4. In another pot, melt butter over medium heat. Whisk in flour until smooth; gradually add milk while whisking until thickened. Stir in cheese until melted.
  5. Salt eggplant slices and let sit for 10 minutes to draw moisture out.
  6. Layer half the meat mixture in the baking dish, followed by half the eggplant slices and half the creamy sauce. Repeat layers.
  7. Cover with foil and bake for 30 minutes; then remove foil and bake uncovered for an additional 15 minutes until golden brown.
  8. Allow resting for 10 minutes before serving.
