- 1 lb lean ground beef
- 2 medium eggplants, sliced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 28 oz canned tomatoes (diced)
- 1 cup feta or Cotija cheese, crumbled
- 2 tsp cumin
- 2 tsp chili powder
- 2 cups milk
- 4 tbsp butter
- 4 tbsp flour
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and prepare a large baking dish.
- In a skillet over medium heat, sauté onions until translucent; add garlic and cook for another minute.
- Add ground beef, breaking it apart as it cooks until browned (5-7 minutes). Drain excess fat and stir in canned tomatoes, cumin, and chili powder.
- In another pot, melt butter over medium heat. Whisk in flour until smooth; gradually add milk while whisking until thickened. Stir in cheese until melted.
- Salt eggplant slices and let sit for 10 minutes to draw moisture out.
- Layer half the meat mixture in the baking dish, followed by half the eggplant slices and half the creamy sauce. Repeat layers.
- Cover with foil and bake for 30 minutes; then remove foil and bake uncovered for an additional 15 minutes until golden brown.
- Allow resting for 10 minutes before serving.
