  • 1 cup cooked rice (white or brown)

  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
  2. In a skillet over medium heat, heat olive oil and sauté diced onion and minced garlic until fragrant (about 3-4 minutes).
  3. Add ground meat, paprika, and oregano; cook until browned (5-7 minutes), breaking it apart with a wooden spoon.
  4. Stir in cooked rice, diced tomatoes, parsley, and feta cheese until well combined.
  5. Generously stuff each pepper with the filling, placing them upright in a baking dish.
  6. Cover with foil and bake for 30 minutes; uncover for the last 10 minutes to brown the tops.
