Description

Mediterranean quesadillas are a vibrant and flavorful dish that combines crispy tortillas with rich feta cheese, fresh spinach, and sun-dried tomatoes. Perfect for any occasion, these quesadillas deliver a taste of the Mediterranean right to your home.


Ingredients

  • 2 large flour tortillas
  • 1 cup crumbled feta cheese (150g)
  • 1 cup fresh spinach (30g)
  • ½ cup sun-dried tomatoes, chopped (70g)
  • 2 tbsp olive oil (30ml)
  • Tzatziki sauce for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Add spinach and sauté until wilted (about 2 minutes). Mix in sun-dried tomatoes and remove from heat.
  2. Place one tortilla on a flat surface and sprinkle half with crumbled feta. Spoon the spinach-tomato mixture on top, then fold the tortilla in half.
  3. Return the skillet to medium heat and cook the folded quesadilla for 3 minutes on each side until golden brown and crispy.
  4. Remove from heat, let cool briefly, then slice into wedges. Serve warm with tzatziki sauce drizzled over or on the side.
