- 2 large flour tortillas
- 1 cup crumbled feta cheese (150g)
- 1 cup fresh spinach (30g)
- ½ cup sun-dried tomatoes, chopped (70g)
- 2 tbsp olive oil (30ml)
- Tzatziki sauce for serving
Instructions
- Heat olive oil in a skillet over medium heat. Add spinach and sauté until wilted (about 2 minutes). Mix in sun-dried tomatoes and remove from heat.
- Place one tortilla on a flat surface and sprinkle half with crumbled feta. Spoon the spinach-tomato mixture on top, then fold the tortilla in half.
- Return the skillet to medium heat and cook the folded quesadilla for 3 minutes on each side until golden brown and crispy.
- Remove from heat, let cool briefly, then slice into wedges. Serve warm with tzatziki sauce drizzled over or on the side.
