  • 3 cloves garlic, minced

  • 2 medium carrots, sliced
  • 1 can (14.5 oz) diced tomatoes in juice
  • 6 cups low-sodium vegetable broth
  • 9 oz fresh or frozen tortellini (any filling)
  • 2 tsp Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper. Form into bite-sized meatballs.
  2. In a large pot over medium heat, drizzle olive oil and sauté chopped onions and sliced carrots until softened (about 5 minutes).
  3. Add minced garlic; cook until fragrant (about 1 minute). Stir in diced tomatoes with their juices.
  4. Pour in vegetable broth; bring to a gentle boil then reduce heat and simmer for about 10 minutes.
  5. Gently add meatballs to the pot; cook for another 10 minutes until fully cooked.
  6. Stir in tortellini; cook according to package instructions (approximately 3–5 minutes). Serve hot garnished with fresh parsley.
