  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup orzo pasta
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper; place in the prepared baking dish.
  3. In a skillet over medium heat, melt butter and sauté garlic until fragrant.
  4. Add heavy cream, chicken broth, thyme, oregano, and half of the Parmesan cheese; simmer for 5 minutes.
  5. Cook orzo according to package instructions until al dente; drain and reserve some pasta water.
  6. Pour the creamy sauce over the chicken; add cooked orzo around it and sprinkle remaining cheese on top.
  7. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C). Let rest for 5 minutes before serving.
