  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 1 cup granulated sugar (divided)
  • 16 oz full-fat cream cheese (softened)
  • ½ cup fresh lemon juice
  • Zest of 2 lemons
  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar until sandy. Press the mixture into the bottom of a greased baking dish.
  2. In a separate bowl, beat softened cream cheese until fluffy. Gradually mix in remaining sugar, followed by lemon juice and zest until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. Pour the cream cheese mixture over the crust; bake for 25-30 minutes until set but slightly jiggly in the center.
  5. Allow to cool completely in the pan before refrigerating for at least two hours before slicing.
