  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup pineapple juice
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 1/4 cup ketchup
  • 3 green onions, sliced (for garnish)

Instructions

  1. In a large bowl, combine pineapple juice, soy sauce, brown sugar, grated ginger, minced garlic, and ketchup. Add chicken thighs and coat well. Cover and marinate in the fridge for at least one hour.
  2. Preheat grill to medium-high heat (375°F or 190°C).
  3. Remove chicken from marinade and pat dry with paper towels.
  4. Grill chicken for 6-8 minutes per side, brushing with reserved marinade during cooking for extra flavor.
  5. Check that the internal temperature reaches 165°F (75°C). Serve garnished with sliced green onions.
