  • 1 cup salsa
  • 1 ½ cups shredded Monterey Jack cheese
  • 6 corn tortillas, cut into quarters
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup bell peppers, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a casserole dish.
  2. Layer tortilla quarters evenly on the bottom of the dish.
  3. Sauté bell peppers in a skillet over medium heat until softened (about 5 minutes).
  4. In a bowl, whisk together eggs and salsa until well combined.
  5. Spread black beans over the tortillas, pour the egg-salsa mixture on top, and sprinkle with cheese.
  6. Bake for about 30 minutes or until golden brown. Let cool slightly before slicing and serving.
