Honey Soy Salmon & Rice Cups are the perfect blend of sweet and savory, transforming tender salmon into a delightful dish that’s sure to impress. Ingredients

  • 2 fresh salmon fillets (6 oz each)
  • 1 cup cooked jasmine rice
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 2 garlic cloves, minced
  • 2 green onions, finely chopped
  • 1 tbsp toasted sesame seeds

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking tray with parchment paper.
  2. In a bowl, whisk together soy sauce, honey, minced garlic, and half the green onions.
  3. Marinate salmon for at least 15 minutes in half of the marinade.
  4. Bake salmon skin-side down for 15-20 minutes until flaky.
  5. Fluff cooked rice and spoon it into small cups. Top with pieces of salmon.
  6. Drizzle remaining marinade over cups and garnish with remaining green onions and sesame seeds.
