- 6 tbsp unsalted butter, cold and cubed
- 1/4 cup ice water
- 2 cups fresh mushrooms (shiitake and cremini), chopped
- 1 cup Gruyère cheese, grated
- 1 tsp fresh thyme leaves
- 1 egg (for egg wash)
- Salt to taste
- Olive oil for sautéing
Instructions
- In a bowl, combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water until dough holds together; wrap in plastic wrap and chill for 30 minutes.
- Heat olive oil in a skillet over medium heat. Sauté mushrooms and thyme for about 7-10 minutes until tender. Remove from heat, stir in grated Gruyère, and allow to cool.
- Roll out the chilled dough into a rough circle on a floured surface. Transfer to parchment paper.
- Spoon mushroom mixture onto the center of the dough, leaving edges clear. Fold edges over filling to form crust; brush with beaten egg.
