  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 medium onion, diced
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup sour cream (for garnish)
  • ¼ cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef until no longer pink. Add diced onions and cook until translucent, about 5 minutes.
  3. Stir in half of the enchilada sauce into the beef mixture and simmer for 5 minutes.
  4. Spoon the beef mixture into each tortilla, sprinkle with cheese, roll tightly, and place seam side down in the baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and top with more cheese.
  6. Cover with foil and bake for 20 minutes; then uncover and bake for an additional 10 minutes until golden and bubbly.
