  • 1 lb large shrimp, peeled and deveined
  • 1 lb white fish fillets (cod or tilapia)
  • 2 bell peppers (red and yellow), cut into chunks
  • 1 red onion, cut into chunks
  • 2 ears corn on the cob, cut into smaller pieces
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Instructions

  1. Wash seafood and vegetables thoroughly; pat dry.
  2. In a bowl, whisk together olive oil, lemon juice, garlic powder, and smoked paprika.
  3. Combine shrimp, fish fillets, bell peppers, onion, and corn in a resealable bag; add marinade. Seal tightly and shake to combine. Let marinate for at least 30 minutes.
  4. Preheat grill to medium-high heat. If using wooden skewers, soak them in water.
  5. Thread marinated seafood and veggies onto skewers.
  6. Grill skewers for about 10-12 minutes, turning occasionally until cooked through.
