  • 4 boneless, skinless chicken breasts (1 lb)
  • 2 cloves garlic, minced
  • 1 cup fresh herbs (basil, parsley, chives mix)
  • 1 cup Greek yogurt
  • 2 tbsp lemon juice (freshly squeezed)
  • 4 whole wheat tortillas (10-inch)
  • 2 cups assorted crisp vegetables (bell peppers, cucumbers, etc.)
  • Salt & pepper to taste

Instructions

  1. 1. Preheat grill or skillet over medium-high heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until fully cooked.
  2. 2. In a bowl, blend Greek yogurt with minced garlic, fresh herbs, lemon juice, salt, and pepper until smooth.
  3. 3. Let chicken rest for a few minutes before slicing thinly against the grain.
  4. 4. Lay tortillas flat, spread green goddess dressing down the center, then top with sliced chicken and vegetables.
  5. 5. Fold in sides of the tortilla and roll tightly from bottom to top. Cut in half diagonally to serve.
