  • 1/2 cup fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1 small onion, finely chopped
  • 4 pita breads
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 2 tbsp lemon juice
  • 1 tbsp fresh dill or mint, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground lamb or beef with parsley, onion, and garlic. Mix gently.
  3. Shape the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  4. Bake for about 20 minutes until golden brown and cooked through (internal temperature of 165°F/74°C).
  5. While baking, prepare tzatziki by mixing Greek yogurt, cucumber, lemon juice, and dill in a bowl; season to taste.
  6. Warm pita bread in the oven or microwave. Stuff each pita with meatballs, tzatziki sauce, and fresh veggies.
