  • 1 lb ground beef or lamb
  • 1 cup fresh breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 3 cloves garlic, minced
  • 1 cup Greek yogurt (full-fat)
  • 1 medium cucumber, grated
  • 1 cup long-grain rice
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, thinly sliced
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine ground meat, breadcrumbs, parsley, garlic, salt, and pepper. Mix gently to avoid dense meatballs.
  3. Roll mixture into 1-inch meatballs and place on a lined baking sheet.
  4. Bake for 20 minutes until golden brown.
  5. For tzatziki, mix yogurt, grated cucumber (squeezed), minced garlic, lemon juice, salt, and pepper in a bowl.
  6. Cook rice according to package instructions.
