Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
- In another bowl, beat the sugar and molasses until smooth, then add the egg and mix well.
- Gradually combine dry ingredients with the wet mixture until just blended.
- Drop tablespoon-sized amounts of dough onto prepared sheets, spacing them two inches apart.
- Bake for 10-12 minutes until they spring back when touched. Cool on wire racks.
- For the filling, beat butter and powdered sugar until fluffy; add vanilla and mix until creamy.
- Once cookies are cool, spread or pipe filling between two cookies to form sandwiches.
