  • 2 pounds Yukon Gold potatoes
  • 6 slices bacon
  • 1 medium red onion, finely chopped
  • 1/3 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Wash and cut the Yukon Gold potatoes into uniform chunks. Place in a pot, cover with cold water, and add salt.
  2. Boil the potatoes over medium-high heat until fork-tender (about 10-15 minutes). Drain and let cool slightly.
  3. In a skillet over medium heat, cook chopped bacon until crispy. Remove from heat, leaving the grease in the skillet.
  4. Sauté the red onion in the bacon grease for about 3 minutes. Stir in apple cider vinegar and mustard.
  5. In a large bowl, combine drained potatoes with the onion mixture; fold in crispy bacon and parsley.
  6. Adjust seasoning if necessary and serve warm or chilled.
