- 12 jumbo shells
- 3 boneless, skinless chicken breasts (about 1 lb)
- 4 cloves fresh garlic, minced
- 2 cups alfredo sauce (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Boil salted water in a large pot and cook the jumbo shells until al dente, about 8-10 minutes. Drain and set aside.
- In a skillet over medium heat, add olive oil. Season diced chicken with salt and pepper; cook until golden brown and no longer pink, about 6-8 minutes.
- Add minced garlic to the skillet; sauté for about 1 minute until fragrant. Stir in alfredo sauce until combined and heated through.
- Generously fill each cooked shell with the chicken alfredo mixture and place them opening side up in a greased baking dish.
- Pour any remaining alfredo sauce over the shells, then sprinkle mozzarella and Parmesan on top. Cover with foil and bake for 20 minutes; remove foil to let cheese bubble for an additional 10 minutes.
- Garnish with fresh parsley before serving.
