  • 1 cup freshly brewed espresso
  • 2 large yellow onions, chopped
  • 4 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 2 bay leaves
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tbsp olive oil
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  3. Sauté onions in the same pot until translucent (about 5 minutes), then add garlic and cook until fragrant.
  4. Pour in espresso and beef broth, scraping any browned bits from the bottom. Stir in sugar, bay leaves, and thyme.
  5. Return short ribs to the pot, ensuring they are submerged in liquid. Bring to a gentle simmer, cover tightly, and transfer to the oven.
