  • 2 large egg yolks
  • Salt and pepper to taste

Instructions

  1. Boil the peeled and chopped potatoes in salted water until fork-tender, about 15-20 minutes. Drain well.
  2. Return the drained potatoes to the pot; add butter and cream. Mash until smooth and creamy.
  3. Stir in egg yolks, salt, pepper, and nutmeg until fully combined.
  4. Preheat oven to 425°F (220°C). Transfer potato mixture into a piping bag or a plastic bag with one corner snipped off.
  5. Pipe swirls onto a parchment-lined baking sheet, spacing them apart for even cooking.
