  • 23 boneless skinless chicken breasts (about 1 lb)
  • 1 cup wild rice
  • 8 oz fresh mushrooms (cremini or button), sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions and minced garlic until fragrant (about 5 minutes).
  2. Add sliced mushrooms and cook until browned (around 8 minutes).
  3. Stir in chicken breasts and pour in the chicken broth. Simmer gently for about 20 minutes until chicken is cooked through.
  4. Add wild rice to the pot, cover, and cook according to package instructions (approximately 45 minutes) until tender.
  5. Remove chicken, shred it with forks, then return it to the pot along with heavy cream and dried thyme. Stir well.
  6. Season with salt and pepper. Serve hot in bowls.
