  • 8 oz fettuccine pasta
  • 1 lb large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 cup coconut milk
  • 2 tbsp jerk seasoning
  • 2 tbsp unsalted butter
  • 2 tbsp lime juice
  • Salt, to taste

Instructions

  1. Cook fettuccine in a large pot of salted boiling water until al dente (8-10 minutes). Reserve ½ cup pasta water, then drain.
  2. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Add shrimp seasoned with jerk seasoning; cook until pink (about 3 minutes per side).
  3. Stir in coconut milk and lime juice; simmer for 5 minutes.
  4. Toss drained pasta into the skillet, mixing well to coat. Adjust consistency with reserved pasta water if needed.
  5. Serve garnished with fresh cilantro or lime wedges.
