  • 3 cloves fresh garlic, minced
  • 3 tbsp Dijon mustard
  • 1 cup heavy cream
  • ¼ cup fresh tarragon leaves, chopped
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the garlic and measuring out the broth and cream.
  2. In a large skillet over medium heat, add olive oil until shimmering. Season chicken breasts with salt and pepper, then sear each side for about 5-7 minutes until golden brown.
  3. Lower the heat slightly, add minced garlic to the skillet, and sauté until fragrant (about 30 seconds). Stir in Dijon mustard.
  4. Pour in the chicken broth to deglaze the pan, scraping up any flavorful bits. Then stir in heavy cream and fresh tarragon.
  5. Allow to simmer on low heat for about 10 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce thickens.
  6. Plate the chicken and spoon the creamy sauce over it. Garnish with additional tarragon if desired.
