  • 1 can (15 oz) chickpeas, rinsed and drained
  • 4 cups fresh spinach
  • 1 cup full-fat coconut milk
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • 2 tbsp coconut oil or olive oil

Instructions

  1. Heat oil in a large skillet over medium heat. Add the chopped onion and sauté until golden brown, about 5 minutes.
  2. Stir in minced garlic and grated ginger; sauté for another minute until fragrant.
  3. Sprinkle in cumin, coriander, turmeric, salt, and pepper. Stir well to coat onions with spices.
  4. Add chickpeas followed by coconut milk; stir gently until combined.
  5. Fold in fresh spinach leaves and cook until just wilted (about 2 minutes).
  6. Remove from heat and stir in lemon juice. Adjust seasoning if needed before serving warm over rice or naan.
