- 4 cups fresh spinach
- 1 cup full-fat coconut milk
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 2 tbsp lemon juice
- Salt and pepper to taste
- 2 tbsp coconut oil or olive oil
Instructions
- Heat oil in a large skillet over medium heat. Add the chopped onion and sauté until golden brown, about 5 minutes.
- Stir in minced garlic and grated ginger; sauté for another minute until fragrant.
- Sprinkle in cumin, coriander, turmeric, salt, and pepper. Stir well to coat onions with spices.
- Add chickpeas followed by coconut milk; stir gently until combined.
