  • 2 cans whole kernel corn (15 oz each), drained
  • 1 cup heavy cream
  • 4 tbsp butter, melted
  • 1 cup shredded sharp cheddar cheese (divided)
  • 1 box Jiffy Corn Muffin Mix (8.5 oz)
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine drained corn, heavy cream, melted butter, ¾ cup cheddar cheese (reserve remaining for topping), Jiffy mix, and eggs until well mixed.
  3. Pour the mixture into the prepared baking dish and spread it evenly.
  4. Sprinkle the reserved cheddar cheese on top.
  5. Bake for 45-50 minutes until golden brown and bubbly.
  6. Allow to cool slightly before serving.
