  • 1 cup full-fat coconut milk
  • 2 tsp curry powder
  • 1 cup quinoa (rinsed)
  • 1 tbsp fresh ginger (grated)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange salmon fillets on the prepared baking sheet, drizzle with coconut milk, and sprinkle with curry powder, salt, and pepper.
  3. In a medium saucepan, combine rinsed quinoa with 2 cups of water or broth. Bring to a boil, then lower heat and simmer until the liquid is absorbed (about 15 minutes).
  4. While quinoa cooks, heat coconut oil in a pan over medium heat. Add grated ginger and sauté until fragrant (about 1 minute).
  5. Once quinoa is fluffy, stir in some coconut milk from the baking sheet along with the sautéed ginger.
  6. Bake salmon for 12-15 minutes or until it flakes easily with a fork.
