  • 1 medium fresh pineapple, sliced
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 3 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a round cake pan and sprinkle brown sugar evenly on the bottom.
  2. Arrange pineapple slices over the brown sugar in the pan, placing maraschino cherries in between if desired.
  3. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, sift together flour, baking powder, and salt. Gradually add this mixture to the butter mixture alternately with milk until just combined.
  5. Pour the batter gently over the pineapple arrangement and bake for about 35-40 minutes or until golden brown and a toothpick comes out clean.
  6. Allow to cool in the pan for 10 minutes before flipping onto a serving plate.
