  • 4 cups cold cooked rice (preferably day-old)
  • 1 cup mixed vegetables (frozen peas and carrots)
  • 2 green onions (chopped)
  • 2 cloves garlic (minced)
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing the chicken, mincing the garlic, and chopping the green onions.
  2. In a large skillet or wok over medium-high heat, add 1 tablespoon of oil. Once hot, stir-fry the diced chicken until golden brown and fully cooked (about 5–7 minutes). Season with salt and pepper.
  3. Add minced garlic and mixed vegetables to the pan with the chicken. Stir-fry for about 3 minutes until heated through.
  4. Add cold cooked rice to the skillet, breaking apart any clumps as you mix thoroughly.
  5. Drizzle soy sauce and sesame oil over the rice mixture. Toss in chopped green onions and stir well until everything is evenly coated.
  6. Serve hot, garnished with additional green onions if desired.
