  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh salsa verde
  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and cook chicken breasts until golden brown (about 6 minutes per side). Remove from heat and shred once cool.
  3. In the same skillet, sauté onions and bell peppers until soft (about 5 minutes).
  4. In a baking dish, layer half the tortillas, followed by half the shredded chicken, black beans, salsa verde, and cheese.
  5. Repeat with remaining ingredients to create another layer.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until bubbly.
