  • 1/2 cup unsalted butter, softened
  • 4 cloves fresh garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup bread crumbs
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix softened butter with minced garlic and chopped parsley; set aside.
  2. Butterfly the chicken breasts by slicing them horizontally to create pockets.
  3. Stuff each pocket with the garlic butter mixture and secure with toothpicks if needed.
  4. Dredge each stuffed breast in seasoned flour, dip in beaten eggs, then coat with breadcrumbs.
  5. Heat oil in a skillet over medium-high heat and fry chicken until golden brown (about 5 minutes per side).
  6. Transfer the chicken to a baking dish and bake at 400°F (200°C) for 10-15 minutes until cooked through.
