  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 cup bell peppers (mixed red and green), diced
  • 4 cups low-sodium chicken broth
  • 1 can (10 oz) enchilada sauce
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream
  • 1 cup shredded cheddar or Monterey Jack cheese

Instructions

  1. Prepare your ingredients by chopping the onion, mincing the garlic, and dicing the bell peppers.
  2. In a large pot over medium heat, add a splash of oil and sauté the onion and bell peppers until soft (about 5 minutes). Add garlic and sauté for another minute.
  3. Add chicken breasts, chicken broth, and enchilada sauce to the pot. Bring to a simmer and cook for about 20 minutes until chicken is cooked through.
  4. Remove chicken from the pot, shred with two forks, and return to the soup.
  5. Stir in any additional seasonings you prefer. Simmer for another 10 minutes.
