  • 1 lb boneless chicken thighs
  • 2 cups low-sodium chicken broth
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 2 tsp baking powder
  • 1 medium yellow onion, diced
  • 2 medium carrots, chopped
  • 2 celery stalks, sliced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil. Season chicken thighs with salt and pepper, then sear until golden brown on both sides (about 5 minutes each). Remove and set aside.
  2. In the same pot, sauté onions, carrots, and celery until softened (about 5 minutes).
  3. Pour in the chicken broth and stir in thyme; bring to a simmer. Return the chicken to the pot.
  4. In a bowl, mix flour, baking powder, salt, and pepper. Stir in milk until thick batter forms.
  5. Drop spoonfuls of dumpling batter into the simmering broth. Cover tightly and steam for about 15 minutes without lifting the lid.
  6. Shred the chicken, return it to the pot, and serve hot.
