  • 1/2 cup low-sodium soy sauce
  • 1/2 cup white vinegar
  • 6 cloves garlic (crushed)
  • 2 tbsp brown sugar
  • 1 tsp black peppercorns
  • 3 green onions (for garnish)

Instructions

  1. 1. Marinate the chicken: In a bowl, mix soy sauce, vinegar, garlic, brown sugar, and black peppercorns. Add chicken thighs and coat well. Cover and refrigerate for at least 1 hour.
  2. 2. Sear the chicken: Heat oil in a skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and sear skin-side down until golden brown (about 5 minutes). Flip and sear the other side.
  3. 3. Simmer: Pour reserved marinade into the skillet and bring to a gentle simmer. Cover and reduce heat to low; let it simmer for 30-40 minutes, flipping occasionally.
  4. 4. Reduce sauce: Remove chicken once tender. Increase heat to medium-high to reduce sauce until thickened.
  5. 5. Serve: Plate the chicken, drizzle with thickened sauce, and garnish with chopped green onions.
